INGREDIENTS

  1. Cucumbers (medium-sized) - 2 nos
  2. Tuna - 1 can
  3. Oil - 1 teaspoon
  4. White pepper (powder) - 1/2 teaspoon
  5. Onion Powder - 1/4 teaspoon
  6. Cajun seasoning - 2 dashes
  7. Dill (dried) - 1 dash
  8. Salt to taste
  9. Cream cheese - 2 teaspoons
  10. Garnishings - fresh rosemary with flowers and mustard microgreens (optional)
  11. Sriracha (hot sauce) - drizzle to your spice level
Tool required - apple corer or melon baller
DIRECTIONS

  • Drizzle some cooking oil in a pan, toss in your chopped onions, and stir until translucent. Add canned tuna (drain the water completely), and sprinkle a dash of salt, pepper, onion powder, Cajun seasoning, and dill to taste. Add a tablespoon of cream cheese and stir. Remove from heat.
  • Prepare your cucumbers by slicing them into 2-inch chunks and coring them using an apple corer or a melon baller that works just right.
  • Scoop the prepared stuffing equally and sprinkle some Cajun seasoning. I garnished it with homegrown rosemary, along with its flower and mustard microgreens. Serve immediately or refrigerate until ready to serve.
NOTES AND TIPS

Prepare your cucumbers for about 2-3 hours, and keep them refrigerated if making for large groups. Peeling the cucumbers into stripes creates an exciting pattern; nevertheless, it's optional.
